Doña Sauce Recipe

By far one of Austin’s iconic restaurants is TacoDeli. In addition to their awesome selection of tacos is the beloved Doña sauce. It’s a creamy spicy salsa that goes great on most anything, and with a few chips it can easily stand on its own.In my quest to try to learn how food I crave is made I took it upon myself to try my hand at the infamous Doña! Let me preface this recipe with the fact that this is my take on a great idea that I didn’t come up with. In no way is this TacoDeli’s recipe, as a matter of fact it’s probably easier to just go buy some from them, but I digress.

Ingredients:

12 to 14 Jalapeños
5 cloves garlic
3 Green Onions
½ Lime Juice
1 TBL Olive Oil
1/3 Cup Canola Oil
1 TSP Salt
½ TSP Fresh Black Pepper

Optional:
½ Cup Fresh cilantro

Start by fire roasting the jalapeños. If you don’t have a Gas Range try the broiler or oven. Fire is best.

While the jalapeños are roasting combine the olive oil and smashed garlic in a sauté pan on medium low. Do not burn.

Once the jalapeños are charred black place in a glass bowl and cover with plastic wrap to allow them to steam for 10 minutes.

After the Garlic is golden brown remove from heat and set aside. Using a paper towel, it may require a few; peal the skin off the jalapeños. Then slice and remove the seeds and steams and set aside.

Fire roast the green onions allowing them to char a bit.

Finally combine the jalapeños, garlic with its olive oil, green onions, lime juice (add cilantro here), salt, and pepper in a blender or food processor. While pulsing the blender slowly drizzle the canola oil, once it starts to combine blend until smooth.

There you have it! As simple as … well maybe more than one two three, but who’s counting.

I made this tonight, very, very good. Thank you for posting this recipe. A little tedious roasting the jalapenos as they don't peel as well as say a red pepper, but well worth it. Love it, thanks. Sharing on Pinterest. Liz
